Hawaiian Chicken Kabobs
Marinade:
1 cup soy sauce
1/2 cup oil
3-4 cloves of garlic, pressed
1/4 cup pineapple juice
1 tbls. vinegar
2 green onions, finely diced (including tops)
2 tbls. cornstarch
Kabob:
2-4 boneless, skinless chicken breasts
1 (16 oz.) can pineapple chunks
1 green bell pepper, cut into chunks
1 pint cherry tomatoes


Marinade: Combine soy sauce, oil, garlic, pineapple juice, vinegar, green onion and cornstarch; blend well.
Kabobs: Cut chicken breasts into 1-inch cubes. Marinate chicken pieces for 1-1/2 to 2 hours in refrigerator. Alternate chicken pieces on skewers with pineapple chunks, green peppers and cherry tomatoes. Grill 3 inches from hot coals for about 5 minutes on each side, brushing frequently with remaining marinade. Yields 6 to 8 servings.
