Beefed Up Kabobs
Marinade:
1/3 cup red wine vinegar
1/4 cup ketchup
2 tbls. olive oil
2 tbls. soy sauce
1 tbls. Dijon-style mustard
1 tsp. salt
1/4 tsp. ground black pepper
2 cloves garlic, minced
Kabob:
1 lb. beef top cirloin, cut into 3/4-inch cubes
1 pint cherry tomatoes
1 pint mushrooms
3 small onions
2 green bell pepper, cut in chunks (optional)


In a small bowl, combine marinade ingredients; mix well. Place beef cubes in a shallow non-metallic container. Pour marinade over meat. Marinate covered in refrigerator 2 hours or longer, turning meat occasionally. Remove meat from marinade, reserving marinade. Thread meat onto skewers, alternating beef cubes with tomatoes, mushrooms, onions and peppers as desired. Meanwhile, heat marinade to boiling then simmer 5 minutes. Grill kabobs over hot coals 10 to 15 minutes, or until meat is done, turning kabobs frequently and basting meat with warmed marinade. Yields 4 servings.
